Mozzarella & Tomato Omelette

Mozzarella & Tomato Omelette - Galbani

Whisk the eggs with a fork and season.

Mix the tomatoes, basil, and balsamic vinegar together in a bowl.

Heat the oil in an ovenproof frying pan and add the egg, swirling the mixture around the pan base until almost set. Add half the tomatoes to 1 side of the omelette and sprinkle over ¾ of the grated mozzarella, flip over the other side of the omelette to enclose the filling and cook for 1 minute more.

Sprinkle the top with the remaining mozzarella and place under a preheated grill for 2-3 minutes until melted and golden. Sprinkle over the remaining tomatoes to serve.


Try adding rocket to the filling for extra flavour.
