Wash and peel the carrots into thin strips. To create a curl effect, keep peeling until you can peel no more, then rotate the carrot and peel from a different angle. Then add the carrots to your dish.
Add a drizzle of extra virgin olive oil and season well with salt, pepper and oregano.
