Carrozzo - Galbani
Preparation

Spread pesto on one slice of bread and place sliced or grated mozzarella on the other. Put them together and make a sandwich. Press the sandwich down slightly to make as compact as possible.

Cut the sandwich into either 4 triangles or squares, then coat in flour, beaten egg with milk, and breadcrumbs. You may need to coat the bread twice using eggy milk and breadcrumbs if cheese is still exposed.

Fry the mozzarella sandwiches in 170°C until golden brown (around 2 minutes).

Season and serve hot with whatever garnish you choose.
