Galbani’s Hard Cheese portfolio ranges Parmigiano Reggiano and Grana Padano. These two cheeses were born during the 12th century in the Lombardia and the Emilia Romagna regions, whose respective consortiums have regulated their production since 1934 and 1954.

GRANA PADANO
Grana Padano is a D.O.P. cheese protected by the Consorzio per la Tutela del Formaggio Grana Padano since 1996. It is a registered trademark both in Italy and abroad. The Grana Padano marks of origin are the four-leaf clover and the diamond shapes with the words “GRANA” and “PADANO” printed across the entire surface of the cheese. The External appearance is dark yellow, slightly oily. Typical aroma and flavour are fragrant and delicate. After a minimum maturation of 9 months, the cheese is fire-branded with a special tool under the supervision of the Consortium technicians. This mark ensures the healthy, fair and commercial quality of Grana Padano.

Its flavour is fragrant and delicate and the aging process goes from a minimum of 9 months to a maximum of a 24 months.

PARMIGIANO REGGIANO
Parmigiano Reggiano is a product with the Protected Designation of Origin (D.O.P.) in compliance with the European norm contained in EEC Regulation 2081/92 and with recognition by Regulation (EC) no. 1107/96. Parmigiano Reggiano is made by law in the provinces of Bologna, Modena, Reggio Emilia, Mantova and Parma. It is aged for a minimum of 12 months; during this time the cheese is nurtured until it becomes pale golden with slightly granular, flaky texture and a nutty, salt like flavour. Parmigiano Reggiano has a thick, hard yellow/orange rind. The ageing process goes from a minimum of 12 months to a maximum of 30 months of maturation
